Fresh Vegetable in Basket

I am a busy working Mom who has been vegetarian since 1983 and vegan since 2017.  My husband's family is full of people in the meat industry and his favorite meal is steak and potatoes.

I have two sons, one in junior high and one in high school, both of whom chose vegetarianism at age 10.

The Hunt for No-Fuss Vegan Deliciousness

In search of vegan recipes that will please carnivores and teenagers

Here I will document my adventures through vegan recipes.  Each recipe will be given a rating by kids, carnivores and level of "fussiness".

Simplicity scale:  1 star will mean obscure ingredients I struggled to find and/or processes that were complex or frustrating, whereas 5 stars will mean I already had most of the ingredients in the house and the cooking process was a breeze.

Kid/Carnivore rating:  I told my kids to give it one star if they hated it and almost had to spit it out, three stars if they could take it or leave it, and five stars if they could see it becoming one of their favorite meals.
