Portobello Mushroom Burgers

So, pretty much everyone knows that burger patties can easily be replaced by a grilled/fried/baked portobello mushroom as a vegan option, and I have been doing this for years. BUT, I had NO IDEA they could taste like this. Absolutely INCREDIBLE flavor and SO EASY.
This recipe comes from "BOSH!" by Henry Firth and Ian Theasby. This book is amazing and it will be delicious to cook my way through it!


Ingredients:
4 Portobello mushrooms
2 garlic cloves
3 sprigs fresh thyme (or more if you like)
1-2 sprigs of fresh rosemary (or more)
2 tsp olive oil
2tsp balsamic glaze
4 vegan hamburger buns (many are accidentally vegan - check ingredients)
1 tomato, sliced
lettuce leaves
slices of red onion
1/4 cup ketchup
1/4 cup vegan mayo (Veganaise is my favorite)
salt and black pepper
Wash and prep all the veggies.

Remove the leaves from the rosemary and thyme and chop them up - enjoy that AMAZING scent. I am lucky enough to have both in my backyard - can't beat that level of fresh.

Place the mushrooms cap side up on a surface. Sprinkle each mushroom's gills with garlic and herbs, and then drizzle with balsamic glaze and olive oil. Season with salt and pepper.

Wrap each mushroom in foil and either place them on the grill, or on a baking sheet destined for a 390-degree pre-heated oven. Bake for 15-20 min.

Build your burger!

This recipe actually called for 8 mushrooms, suggesting 2 mushrooms per burger. I found one to be PLENTY, so that's what I included in the recipe. Feel free to double-stack! I also made some homemade air-fryer fries to go with it.
