Smoky Tempeh and Hummus Sandwiches

This recipe is from "Food 52 Vegan - 60 Vegetable-Driven Recipes for Any Kitchen" by Gena Hamshaw. I'm excited to explore this book a bunch more in upcoming weeks, with its vibrant photos and scrumptious-sounding creations.


I chose the Smoky Tempeh and Hummus Sandwich for today mostly because I had some tempeh that was about to expire and had all the other ingredients on hand (except the pea shoots - 4 grocery stores later I am the proud owner of pea shoots). The author does say you can use any sprout or arugula to provide the freshness, but I had to try it as intended!


Ingredients:


Tempeh:

2 tbsp tamari

1 tbsp apple cider vinegar

1 tbsp maple syrup or agave

1 tsp olive oil

1 tsp smoked paprika

8 oz tempeh, cut into strips 1/4 in thick


Hummus:

2 cups cooked chickpeas (I used canned)

1/4 cup tahini

1/4 cup fresh squeezed lemon juice

1 clove of garlic, minced

1/2 tsp salt

1/4 cup water

1/2 tsp smoked paprika

1 tbsp olive oil


Whole grain bread

Pea shoots


For tempeh, combine marinating ingredients and lay the tempeh strips in the marinade for 3-8 hours in the fridge.



While it is marinating, you can make the hummus. Blend up everything except water, paprika and olive oil. After everything is initially mixed, add water until it is a good consistency. Then add paprika and olive oil and give it a good blend.


The tempeh slices can be baked in a 350-degree oven for 25 min, or fried in a little olive oil.



Toast the bread, spread with hummus, add lovely pea shoots and baked or fried tempeh. Enjoy!

Vegan review: ⭐⭐⭐ This was ok, but somewhat disappointing. I think the best parts were the hummus and pea shoots, and I might make a sandwich in the future with just the hummus and shoots.


Simplicity: ⭐⭐⭐⭐ This was super easy to assemble, but I anticipate there might be some issue for some people in finding the pea shoots, or maybe the tempeh. I also normally have tamari and tahini on hand, but I'm not sure if others do.


Carnivore rating: ⭐⭐ "Don't love the texture of the tempeh and it lacks a little flavor."


Kid rating: One kid: ⭐⭐⭐⭐ "I really like this Mom!"

Other kid: ⭐⭐ "I don't like this. I don't like the hummus or the tempeh. But

can I have some pea shoots just plain?"


So there it is. Mixed reviews and not a hit. Granted, tempeh is an acquired texture. However, in this process I discovered the delight of pea shoots and will continue to buy them for sandwiches and salads and to eat "just plain".
