This recipe comes to us from "Food 52- Vegan" by Gena Hamshaw. I was looking for a quick and easy gluten-free homemade granola bar...that is exactly what this is! I have to admit, the "5 Minute" promise was attractive!
Ingredients:
2 1/2 cups rolled oats (I used gluten free because I was baking for a gluten-free friend)
1 cup pumpkin seeds
1/2 cup raisins
2/3 cup peanut butter or almond butter (I used peanut butter to save $)
1/2 cup agave nectar
1/8 tsp salt
Take an 8" X 8" baking pan and line it with aluminum foil or parchment paper. Set it aside for later.
Combine oats, pumpkin seeds and raisins in a bowl.
In another bowl, combine peanut (or almond) butter, agave nectar and salt.
Add the nut butter mixture to the oats mixture and stir to combine.
Once it is mixed, press into the prepared pan and chill! Once chilled, it can be cut into squares or rectangles (or any other shape!).
Simplicity Rating: ⭐⭐⭐⭐⭐ Simple ingredients (assuming you have agave nectar), and I timed myself making it...not quite five minutes, but a solid seven (though taking photos slowed me down, to be fair).
Vegan Rating: ⭐⭐⭐⭐ A good, hearty granola bar with great, healthy ingredients.
Carnivore Rating: ⭐⭐⭐ "It's ok."
Kid Rating: ⭐⭐⭐ "I like the other maple bars better."
Super quick and healthy alternative to the processed granola bars you can buy in the store. Enjoy!
