Banana Bread Muffin Tops

This recipe comes to us from the amazing Angela Liddon and her "Oh She Glows" series. These were crazy-easy to make and delicious! Vegan, gluten-free and easy to freeze - what more can you ask for??

Ingredients:


2 large ripe bananas (I struggled with the idea of including such ugly bananas in the photo above...but this is the ripeness you need for this recipe, so I used the uglies!)

1/2 cup packed Medjool dates, pitted (buy the pre-pitted ones - so worth the extra $)

1/4 cup softened coconut oil

1 tsp vanilla extract

1 tsp cinnamon

1 tsp baking powder

1/4 tsp (or a touch more) fine sea salt

2 cups oats (gluten free if you need)

1/4 cup non-dairy chocolate chips (really, only a 1/4 cup and it's still chocolatey!)


I could not believe how easily this came together...


Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.

Get out the food processor and throw in the bananas, dates, coconut oil and vanilla, processing it until smooth.


Add the cinnamon, baking powder and salt and process again.

Then, add 1 1/2 cups of the 2 cups of rolled oats and process for just a few seconds (4-5). Then remove the blade from your food processor, add the other 1/2 cup of oats and chocolate chips and stir with a spoon until everything is combined.


Once mixed, place mounds of the dough onto the baking sheet with parchment paper. Bake for 17-19 minutes, turning the pan once in the middle of the baking time.


After baking, let the pan cool on a wire rack for several minutes, then transfer the muffin tops to a wire rack. Yum.


Simplicity rating: ⭐⭐⭐⭐⭐ I truly could not believe how easy this was to make. The food processor allowed this recipe to come together in seriously about 5 minutes.


Vegan rating: ⭐⭐⭐⭐⭐ Wow. What a great option for a quick breakfast. I froze a bunch of these in ziploc bags to take on the road as needed and they are a fabulous alternative to anything processed and for sure better than any fast food alternative. Much better for you as well!


Carnivore rating: ⭐⭐⭐⭐ "If I liked banana bread, I'd probably give this a 5."


Kid rating: ⭐⭐⭐⭐⭐ "Wow, Mom, wow."
