It's summer, it's barbeque season, and people are looking for delicious recipes that are quick, satisfying, and delicious. That is just what I was looking for, and that is why this recipe is featured today.
This recipe comes to us from "Evolving Vegan" by Mena Massoud, a highly eclectic and creative collection of recipes.
Although this recipe is pretty mainstream, it is delicious and led me to try grilled pineapple for the first time (how is it possible that this has evaded me for so long?). I hope you enjoy this easy and tasty recipe!
2 Tbsp tamari
2 Tbsp pineapple juice
1 tsp apple cider vinegar
2 tsp grated fresh ginger
2 garlic cloves, finely chopped
1/2 tsp ground turmeric
Tofu and veggies:
1 package of extra-firm tofu (14-oz package, drained, patted dry, and cut into 1 to 1 1/2 inch cubes)
1 carrot, sliced
1 red bell pepper, sliced
4 oz broccoli florets
2 oz snow peas, ends trimmed
1 Tbsp avocado oil
Sea salt and pepper
2 cups cubed fresh pineapple
Cilantro leaves (garnish)
2 scallions, sliced thinly (garnish)
Prepare all veggies and tofu.
In a large bowl, combine tamari, pineapple juice, vinegar, ginger, garlic and turmeric with a whisk.
Add tofu to the marinade, and coat. Cover and refrigerate - 30 min to 24 hours.
In a bowl, combine veggies with oil, and then season with salt and pepper.
At this point, you can either prepare the veggies in the oven by broiling for about 5 min (if your oven allows a low broil, use that setting). If you would like to use the barbeque, instead place the veggies on a sheet of aluminum foil and create a foil package for the grill. (This is what I opted for).
For the tofu skewers, be sure to soak the wooden skewers in water prior to loading them, to be sure they don't burn. I simply use a baking sheet with 1 cm of water.
Load the skewers, alternating tofu pieces and pineapple chunks. Place on the barbeque grill, or under the broiler for 3-5 minutes. If using the barbeque, the vegetable pack can placed on the grill at the same time as the skewers.
Turn the skewers a time or two during cooking for even grilling.
Plate and enjoy!
Simplicity rating: ⭐⭐⭐⭐⭐ This was very simple, and included ingredients almost everyone would have on hand. Veggies can be adjusted for whatever you have in the fridge.
Vegan rating: ⭐⭐⭐⭐⭐ The combination of marinated tofu and sweet grilled pineapple was lovely, and allowing the veggies to speak for themselves without a sauce or being over-seasoned was a refreshing change!
Kid rating: ⭐⭐⭐⭐ Grilled pineapple was a surprise ("I think I like the pineapple just fresh, Mom") but overall the dish was a hit.
Carnivore rating: ⭐⭐⭐⭐ Would be great if he loved tofu. Marinade could easily be used on chicken for the family willing to diversify.
